Apagar con un poco de vino blanco. Agregar fondo y dar cocci\u00f3n. Filtrar y moler verduras. Incorporar fondo.  Dar consistencia deseada. Mezclar el pur\u00e9 de topinambur m\u00e1s ciboulette y puerro; agregar yema y queso parmesano. Incorporar gradualmente la harina hasta obtener una masa suave, pero compacta. Amasar bien. Extender la masa y cortar en trozos de 2,5 cm. Dar forma oval y pasarle tenedor.
